I second cross stitch/embroidery, they make embroidery pens for people with dexterity issues, and they're cheap. But it's also perfectly possible to knit entirely one handed, for example some people hold one needle between their legs or under their arm, and there is a thing called a Shetland knitting belt which is specifically designed for holding one needle rigid (it was a thing people used in the olden days so they could knit faster).
